It’s certain that typical Majorcan cuisine is strongly linked to Mediterranean food and wine culture. However, the influx of tourists on the island due to the increase of Majorca hotels, has transformed traditional Mediterranean recipes into different tastes from all over the world.
The best idea is to move away from the tourist restaurants, stay in one of the local Majorca apartments and try to taste more authentically Majorcan dishes. The places where this heritage is still present today are called “cellers” which can be found in the buildings of ancient wine producers. In cellers you can taste the typical Majorcan food, including the soups, which are hot broths of meat and vegetables just waiting to be soaked up with slices of fresh, local bread. Recommended during the summer season is ‘trempò’, a classic vegetable salad, composed of tomatoes, red chilli, garlic, olives, vinegar and salt. It’s a very rich and nutritious dish, an ideal meal after a day out at sea.
For meat-lovers, I recommend tasting the pork dishes, a very popular meat throughout Spain. Arròs the Brut is excellent: rice with a lot of meat and vegetables. This recipe should not be confused with the Arròs Sec, the name of the classic paella.
Another traditional dish is the Freixura or Frit Mallorquí, a dish made up of fried offal accompanied by vegetables or potatoes. Among the Majorcan traditional cold cuts there is the “sobrassada”, pork with spices and paprika, and the “botifarrons”, a mess of meat and pig blood.
Do not forget however that the Mediterranean Sea is also a fantastic area for sea food such as tasty stuffed squid or Peix to Forn (baked fish).
At the end of a meal, try the ‘ensaïmada ‘, a typical spiral shaped sweet prepared with pork fat (which is what makes it so tasty), a ‘gató’ with an ice cream and a cheese cake called ‘greixonera de brossat ‘. The excellent local wine, which has received recognition across Europe for its quality, can enhance every meal.
